Lemon Herb Grilled Chicken with Avocado Salad is a fresh, high-protein dinner packed with bright citrus flavor.
Ingredients
4 boneless skinless chicken breasts
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
3 cloves garlic minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
2 ripe avocados diced
1 cup cherry tomatoes halved
1 cucumber diced
1/4 cup red onion sliced
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon fresh parsley chopped
Instructions
1. Whisk olive oil lemon juice zest garlic oregano thyme salt and pepper
2. Coat chicken with marinade and rest 15 minutes
3. Preheat grill to medium high heat
4. Grill chicken 5 to 6 minutes per side
5. Rest chicken 5 minutes
6. Combine avocado tomatoes cucumber onion olive oil lemon juice parsley and salt
7. Slice chicken and serve with salad

Use thermometer for 165 degrees F
Store salad separately
