Description

Lemon Herb Tuna Pasta Salad is a light and refreshing dish made with flaky tuna, tender pasta, and bright lemon dressing.


Ingredients

Scale

12 ounces rotini pasta

2 cans tuna in water, drained

1 cup cherry tomatoes

1 cup cucumber, diced

1/4 cup red onion

2 tablespoons fresh parsley

1 tablespoon fresh dill

1/4 cup olive oil

3 tablespoons lemon juice

1 teaspoon lemon zest

1 teaspoon Dijon mustard

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Cook pasta until al dente and rinse under cold water.

2. Combine pasta with tuna and vegetables.

3. Whisk dressing ingredients.

4. Pour dressing over salad and toss gently.

5. Chill 30 minutes before serving.

Notes

Store up to 3 days refrigerated.

Add feta for extra flavor.

Use whole wheat pasta if preferred.
