Description
Soft buttery cookies with bright lemon and gentle lavender flavor, filled with sweet lemon glaze.
Ingredients
1 cup unsalted butter, softened
2/3 cup granulated sugar
1 large egg yolk
1 tablespoon fresh lemon zest
1 tablespoon fresh lemon juice
1/2 teaspoon culinary lavender, crushed
2 cups all-purpose flour
1/4 teaspoon salt
1 cup powdered sugar
2–3 teaspoons fresh lemon juice
Instructions
1. Preheat oven to 350ยฐF and line baking sheet with parchment.
2. Cream butter and sugar until fluffy.
3. Mix in egg yolk, lemon zest, lemon juice, and lavender.
4. Add flour and salt and mix to form dough.
5. Roll into balls and press thumbprint into center.
6. Bake 10-12 minutes until edges are lightly golden.
7. Cool and fill centers with lemon glaze.
Notes
Use culinary-grade lavender only.
Chill dough if too soft.
Store in airtight container up to 4 days.
