Description

Loaded Baked Potato Salad is a creamy and hearty side dish made with tender potatoes, cheddar cheese, bacon, and green onions.


Ingredients

2 pounds russet potatoes, diced

1 cup sour cream

1/2 cup mayonnaise

1 1/2 cups shredded cheddar cheese

1/2 cup green onions, sliced

3/4 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Boil diced potatoes 15-18 minutes until fork-tender.

2. Drain and cool slightly.

3. Mix sour cream, mayonnaise, salt, and pepper.

4. Combine potatoes with cheese, bacon, and green onions.

5. Stir in dressing gently.

6. Chill at least 1 hour before serving.

Notes

Store up to 4 days refrigerated.

Add jalapeños for heat.

Leave skins on for texture.
