Description
Mango Avocado Chicken Salad is fresh, creamy, and sweet with tender chicken, juicy mango, and ripe avocado.
Ingredients
3 cups cooked chicken breast, diced
1 ripe mango, diced
1 large avocado, diced
4 cups mixed greens
1/4 cup red onion, thinly sliced
1/4 cup fresh cilantro, chopped
Lime Honey Dressing:
3 tablespoons olive oil
1 tablespoon fresh lime juice
1 teaspoon honey
Salt and black pepper to taste
Instructions
1. Cook chicken until fully done and rest.
2. Dice chicken into bite-size pieces.
3. Add greens to a large bowl.
4. Layer mango, avocado, onion, and cilantro.
5. Add diced chicken on top.
6. Whisk dressing ingredients together.
7. Drizzle dressing over salad and toss gently before serving.
Notes
Add avocado just before serving for freshness.
Store dressing separately if prepping ahead.
Serve immediately after tossing.
