Description
These mashed potato puffs are crispy on the outside, soft and cheesy inside. Perfect for using up leftovers and turning them into something truly special.
Ingredients
- 2 cups mashed potatoes
- 1 large egg
- 1 cup shredded cheddar cheese
- 2 tablespoons green onions, chopped
- 2 tablespoons breadcrumbs
- Salt and pepper to taste
- Optional: cooked bacon, garlic powder, herbs
Instructions
1. Preheat oven to 400°F and grease a muffin tin.
2. In a large bowl, combine mashed potatoes, egg, cheese, green onions, breadcrumbs, and seasonings.
3. Spoon the mixture evenly into muffin tin cups.
4. Bake for 25–30 minutes until golden and crisp.
5. Let cool for 5 minutes before removing from the tin.
6. Serve warm with your favorite dipping sauce.
Notes
Use cold mashed potatoes for best results.
Add flour if the mixture is too wet.
Freeze leftovers and reheat in oven for best texture.
