Description
Mediterranean High Protein Chicken Salad is fresh, creamy, and packed with lean protein, olives, and herbs for an easy healthy meal.
Ingredients
3 cups cooked chicken breast, diced
1/2 cup plain Greek yogurt
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1/2 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup Kalamata olives, sliced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh oregano, chopped
Salt and black pepper to taste
Instructions
1. Add diced chicken to a large bowl.
2. Whisk Greek yogurt, olive oil, and lemon juice.
3. Season dressing with salt and pepper.
4. Pour dressing over chicken.
5. Add tomatoes, cucumber, onion, olives, parsley, and oregano.
6. Fold gently until combined.
7. Chill for 20 minutes before serving.
Notes
Store in refrigerator for up to 4 days.
Add feta cheese for extra flavor.
Serve in pita or lettuce wraps.
