Description

No Mayo Mustard Potato Salad is a light and tangy side dish made with tender potatoes, Dijon mustard, and fresh herbs.


Ingredients

2 pounds red potatoes, diced

1/4 cup olive oil

3 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup celery, chopped

1/4 cup red onion, diced

2 tablespoons parsley

1 tablespoon dill (optional)


Instructions

1. Boil diced potatoes 12-15 minutes until fork-tender.

2. Drain and cool slightly.

3. Whisk olive oil, mustard, vinegar, salt, and pepper.

4. Toss warm potatoes with dressing.

5. Stir in celery, onion, and herbs.

6. Chill at least 1 hour before serving.

Notes

Store up to 4 days refrigerated.

Serve slightly warm or chilled.
