Description

One Bowl Easy Zucchini Bread that bakes soft, moist, and tender with simple ingredients.


Ingredients

Scale

2 cups grated zucchini (lightly squeezed)

2 cups all-purpose flour

3/4 cup granulated sugar

1/2 cup brown sugar

1/2 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon salt


Instructions

1. Preheat oven to 350ยฐF and grease loaf pan.

2. Whisk eggs, sugars, oil, and vanilla.

3. Stir in zucchini.

4. Add dry ingredients to same bowl.

5. Stir gently until combined.

6. Fold in optional mix-ins.

7. Pour into pan.

8. Bake 50-55 minutes.

9. Cool before slicing.

Notes

Lightly squeeze zucchini.

Do not overmix batter.

Store airtight up to 3 days.
