Description

One-Pot Irish Sausage and Potato Skillet made with savory sausage, crispy potatoes, onions, and herbs in one easy pan.


Ingredients

Scale

1 lb Irish pork sausage links

1½ lbs Yukon gold potatoes, diced

1 tbsp olive oil

1 onion, sliced

1 red bell pepper, sliced

2 cloves garlic, minced

1 tsp dried thyme

½ tsp salt

½ tsp black pepper

2 tbsp parsley


Instructions

1. Brown sausage 6–8 minutes.

2. Remove and slice.

3. Cook potatoes 12–15 minutes until golden.

4. Add onion and pepper.

5. Stir in garlic and seasoning.

6. Return sausage and cook 5–7 minutes.

7. Garnish and serve.

Notes

Do not overcrowd potatoes for crisp texture.

Reheat leftovers in skillet for best results.
