Description
Creamy and zesty one-pot lemon garlic shrimp orzo with juicy shrimp, Parmesan, and spinach.
Ingredients
1 lb shrimp
1 cup orzo
2 tbsp olive oil
3 cloves garlic
2 cups broth
1 lemon
½ cup Parmesan
2 tbsp butter
1 cup spinach
Salt, pepper
Instructions
1. Heat olive oil and cook shrimp 2–3 mins per side.
2. Remove shrimp, add butter, sauté garlic.
3. Add orzo, toast 1 min.
4. Add broth, simmer 8–10 mins.
5. Add lemon juice, zest, and Parmesan.
6. Return shrimp, stir in spinach, serve warm.
Notes
Add cherry tomatoes for color.
Use scallops or chicken as variation.
