Description
One-Pot Peruvian Chicken and Yellow Rice with bold spices and fluffy golden rice.
Ingredients
4 chicken thighs
1 tbsp olive oil
Cumin
Smoked paprika
Oregano
Garlic powder
Chili powder
1.5 cups white rice
3 cups chicken broth
1 tsp turmeric
1 onion
2 garlic cloves
1/2 cup peas
Lime juice
Cilantro
Instructions
1. Heat oil in skillet.
2. Season and sear chicken.
3. Remove chicken.
4. Sautรฉ onion and garlic.
5. Add rice and turmeric.
6. Pour broth and return chicken.
7. Cover and cook 20โ25 minutes.
8. Add peas last 5 minutes.
9. Rest, garnish, and serve.
Notes
Rinse rice before cooking.
Let rest before fluffing.
Use boneless thighs for quicker cooking.
