Description

This One-Pot Spicy Sausage and Rice is a hearty, flavor-packed meal made with smoky sausage, tender rice, and bold Cajun spices — all cooked in one pan for easy cleanup.


Ingredients

1 lb smoked sausage (or andouille), sliced

1 tbsp olive oil

1 onion, chopped

1 red bell pepper, diced

3 cloves garlic, minced

1 cup long-grain rice, uncooked

2 cups chicken broth

1 can (14 oz) diced tomatoes

1 tsp smoked paprika

½ tsp cayenne pepper (adjust to taste)

Salt and black pepper to taste

2 green onions, sliced for garnish


Instructions

1. Heat olive oil in a large skillet over medium heat.

2. Add sliced sausage and cook until browned, about 4 minutes.

3. Add onion, red pepper, and garlic; sauté until softened.

4. Stir in rice, coating grains in oil and spices.

5. Add chicken broth, diced tomatoes, smoked paprika, and cayenne; stir.

6. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.

7. Fluff rice, season with salt and pepper, and garnish with green onions.

Notes

Swap andouille sausage for chorizo for a smoky twist.

Use brown rice for added fiber — just increase broth by ½ cup.

Freeze leftovers up to 2 months.
