Description
Creamy Thai coconut curry chicken cooked in one pot with bold, fragrant spices and tender chicken.
Ingredients
1 lb chicken thighs
1 tbsp coconut oil
2 tbsp Thai red curry paste
1 can coconut milk
1 tbsp fish sauce
1 tbsp brown sugar
1 red bell pepper
1 onion
2 cloves garlic
1 tbsp grated ginger
1 lime
Fresh cilantro
Instructions
1. Heat oil and cook curry paste with ginger and garlic.
2. Add chicken; brown lightly.
3. Stir in coconut milk, fish sauce, sugar; simmer 15 min.
4. Add veggies and cook until tender.
5. Finish with lime juice and cilantro.
Notes
Swap chicken for shrimp or tofu.
Add spinach or peas for more veggies.
Serve over jasmine rice.
