Description
Red Skin Potato Salad with Herbs is a fresh and flavorful side dish made with tender red potatoes and bright herb dressing.
Ingredients
2 pounds red potatoes, diced
1/4 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 cup celery, chopped
1/4 cup red onion, diced
3 tablespoons parsley
1 tablespoon dill
1 tablespoon chives
Instructions
1. Boil diced potatoes 12-15 minutes until fork-tender.
2. Drain and cool slightly.
3. Whisk olive oil, vinegar, mustard, salt, and pepper.
4. Toss warm potatoes with dressing.
5. Stir in celery, onion, and herbs.
6. Chill at least 1 hour before serving.
Notes
Store up to 4 days refrigerated.
Serve slightly warm or chilled.
