Description

Rotisserie High Protein Chicken Salad is creamy, fresh, and packed with lean protein for a quick and easy meal.


Ingredients

3 cups rotisserie chicken, shredded

1/2 cup plain Greek yogurt

1/4 cup mayonnaise

1/2 cup celery, diced

2 tablespoons red onion, finely chopped

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and black pepper to taste

1 tablespoon fresh parsley, chopped


Instructions

1. Remove skin from rotisserie chicken and shred the meat.

2. Mix Greek yogurt, mayonnaise, lemon juice, and Dijon mustard in a bowl.

3. Season with salt and pepper.

4. Fold in celery, red onion, and parsley.

5. Mix gently until fully combined.

6. Chill for 20 minutes before serving.

Notes

Store in the refrigerator for up to 4 days.

Serve in lettuce wraps for a low-carb option.
