Description
A comforting, easy-to-make Simple Chicken Zucchini Bake featuring tender shredded chicken, layers of zucchini, and golden melted cheese. Perfect for a healthy weeknight dinner or meal prep option.
Ingredients
2 medium zucchinis, thinly sliced
2 cups cooked shredded chicken
1 ½ cups part-skim mozzarella cheese
1 tsp garlic powder
1 tsp salt
½ tsp black pepper
1 tbsp olive oil
½ tsp dried oregano
Instructions
1. Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
2. Layer zucchini slices along the bottom of the dish, slightly overlapping.
3. Add a layer of shredded chicken, then sprinkle garlic powder, salt, and pepper.
4. Repeat layers until ingredients are used up, finishing with mozzarella on top.
5. Drizzle with olive oil and sprinkle oregano.
6. Bake uncovered for 25–30 minutes until golden and bubbly.
7. Optional: broil for 2 minutes for a crispy top.
8. Let it rest 5 minutes before serving.
Notes
To make it lighter, use Greek yogurt or cottage cheese instead of mozzarella.
Add Mediterranean flair with olives, feta, and roasted peppers.
Store leftovers in an airtight container for up to 3 days.
