Slow Cooker Corned Beef with Carrots and Onions cooked low and slow for tender brisket and flavorful vegetables.
Ingredients
3–4 lb corned beef brisket
4 cups beef broth
5 carrots
2 onions
2 garlic cloves
1 bay leaf
1 small cabbage (optional)
Instructions
1. Rinse corned beef.
2. Place carrots and onions in slow cooker.
3. Add garlic and bay leaf.
4. Place brisket on top.
5. Pour broth over meat.
6. Cook on low for 480 minutes.
7. Add cabbage last 90–120 minutes.
8. Rest, slice against grain, and serve.

Cook on low for best tenderness.
