Description
Slow Cooker Corned Beef with Red Potatoes cooked low and slow for tender brisket and creamy potatoes.
Ingredients
3–4 lb corned beef brisket
4 cups beef broth
2 lbs red potatoes
4 carrots
1 onion
1 small cabbage
2 garlic cloves
1 bay leaf
Instructions
1. Rinse corned beef.
2. Place onion, garlic, and bay leaf in slow cooker.
3. Add brisket and spice packet.
4. Pour broth over meat.
5. Add red potatoes and carrots.
6. Cook on low for 480 minutes.
7. Add cabbage last 90–120 minutes.
8. Rest, slice against grain, and serve.
Notes
Cook on low for best tenderness.
Slice against the grain.
