Description
Slow Cooker Teriyaki Chicken Bowls feature tender shredded chicken in a rich homemade teriyaki sauce.
Ingredients
2 lbs boneless skinless chicken breasts
3/4 cup low sodium soy sauce
1/2 cup water
1/3 cup brown sugar
2 tbsp honey
3 garlic cloves minced
1 tsp grated ginger
1 tbsp rice vinegar
1 tbsp cornstarch
2 tbsp water
3 cups cooked rice
1 cup broccoli
1 cup shredded carrots
1/2 cup edamame
1 tbsp sesame seeds
2 green onions sliced
Instructions
1. Place chicken in slow cooker
2. Whisk sauce ingredients
3. Pour over chicken
4. Cook on LOW 4-6 hours
5. Shred chicken
6. Add cornstarch slurry
7. Return chicken and thicken sauce
8. Assemble bowls with rice and toppings
Notes
Use thighs for richer flavor
Add pineapple for sweetness
Cook uncovered to reduce sauce
