Description
Southern Style Potato Salad is a creamy and comforting side dish made with tender potatoes, eggs, mustard, and sweet relish.
Ingredients
2 pounds potatoes, peeled and diced
1 cup mayonnaise
2 tablespoons yellow mustard
2 tablespoons sweet pickle relish
1/2 cup celery, chopped
1/4 cup sweet onion, diced
3 hard-boiled eggs, chopped
3/4 teaspoon salt
1/2 teaspoon black pepper
Paprika for garnish
Instructions
1. Boil diced potatoes 12-15 minutes until fork-tender.
2. Drain and cool slightly.
3. Whisk mayonnaise, mustard, relish, salt, and pepper.
4. Combine potatoes with celery, onion, and eggs.
5. Stir in dressing gently.
6. Chill at least 1 hour and garnish with paprika before serving.
Notes
Store up to 4 days refrigerated.
Add vinegar for extra tang.
