Description

Southwest Chicken Pasta Salad is a bold and satisfying dish made with grilled chicken, black beans, corn, and creamy lime dressing.


Ingredients

12 ounces rotini pasta

2 cups cooked chicken breast, diced

1 cup black beans, drained and rinsed

1 cup sweet corn

1 red bell pepper, diced

1/4 cup red onion, chopped

1/4 cup fresh cilantro

1/2 cup plain Greek yogurt

2 tablespoons olive oil

2 tablespoons lime juice

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Cook pasta until al dente and rinse under cold water.

2. Combine pasta with chicken, beans, corn, bell pepper, onion, and cilantro.

3. Whisk dressing ingredients until smooth.

4. Pour dressing over salad and toss evenly.

5. Chill 30 minutes before serving.

Notes

Store up to 4 days refrigerated.

Add avocado before serving.
