- 1 medium spaghetti squash (2–3 lbs)
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup spaghetti sauce
- 1/4 cup Parmesan cheese
- 2 tbsp fresh basil, chopped
Instructions
1. Preheat oven to 400°F (200°C).
2. Cut squash lengthwise and scoop out seeds.
3. Brush with olive oil, season with salt and pepper.
4. Place face down and roast for 40–45 minutes.
5. Scrape out strands with a fork.
6. Top with spaghetti sauce, cheese, and basil.
Notes
Microwave the squash for 3 minutes before cutting to make slicing easier.
