Description

Easy St. Patrick’s Day Cookies with bright green centers and powdered sugar crackle tops. Soft, festive, and perfect for celebrating.


Ingredients

Scale

1 box white cake mix (15.25 oz)

2 large eggs

1/3 cup vegetable oil

1 teaspoon vanilla extract

Green food coloring

1/2 cup powdered sugar


Instructions

1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

2. Mix cake mix, eggs, oil, and vanilla in a large bowl.

3. Add green food coloring and stir until evenly tinted.

4. Scoop dough into 1-inch balls.

5. Roll each ball generously in powdered sugar.

6. Place on baking sheet 2 inches apart.

7. Bake for 9–11 minutes until crackled and set.

8. Cool on the pan for 5 minutes before transferring to a wire rack.

Notes

Chill dough for 20 minutes if sticky.

Use gel food coloring for a deeper green shade.

Store in an airtight container for up to 4 days.

Freeze baked cookies for up to 2 months.
