Description

Street Corn Chicken Skillet is a bold, creamy one-pan dinner inspired by Mexican street corn.


Ingredients

Scale

4 boneless skinless chicken breasts

2 tbsp olive oil

1 tsp chili powder

1/2 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

2 cups corn

1/2 cup mayonnaise

1/4 cup sour cream

Juice of 1 lime

1/2 cup cotija cheese

2 tbsp cilantro

1 garlic clove minced


Instructions

1. Season chicken with spices

2. Heat oil in skillet

3. Sear chicken 5-6 minutes per side

4. Remove chicken

5. Cook corn until charred

6. Add garlic and cook briefly

7. Mix mayonnaise sour cream and lime juice

8. Return chicken to skillet

9. Top with sauce cheese and cilantro

Notes

Use feta if cotija unavailable

Add jalapeno for spice

Broil briefly for color
