Stuffed Zucchini Boats with Ground Beef that are savory, cheesy, and baked until tender.
Ingredients
4 medium zucchini
1 pound ground beef
1 cup marinara sauce
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 small onion, diced
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
Instructions
1. Preheat oven to 400ยฐF and line baking sheet.
2. Slice zucchini and scoop centers.
3. Brush with olive oil.
4. Cook onion and garlic.
5. Brown ground beef and drain fat.
6. Stir in marinara and seasonings.
7. Fill zucchini boats.
8. Top with cheese.
9. Bake 25-30 minutes until tender.
Notes
Do not overbake zucchini.
Store leftovers in refrigerator up to 3 days.
Reheat in oven for best texture.
