Description

Slow-cooked Cajun swamp potatoes made with gold potatoes, sausage, and green beans in a buttery Southern-style sauce.


Ingredients

Scale

3 lbs gold potatoes, cubed

2 (12 oz) smoked chicken sausage, sliced

1 ½ lbs fresh green beans, trimmed

1 onion, chopped

1 ½ tsp Cajun seasoning

½ tsp garlic powder

1 beef bouillon cube

5 tbsp butter

Salt & pepper to taste

1 tbsp dried minced onion


Instructions

1. Layer potatoes and onion in slow cooker.

2. Season with Cajun spice, salt, and garlic powder.

3. Add sausage, green beans, and bouillon.

4. Top with butter and cook on low 6–7 hours.

5. Stir gently and serve warm.

Notes

Use real butter for best flavor.

Let rest 10 minutes before serving for a thicker sauce.
