Ingredients
1 lb breakfast sausage, cooked and drained
8 large eggs
2 cups shredded cheddar cheese, divided
2 cups milk
1 (32 oz) bag frozen tater tots
Salt and black pepper to taste
Optional: green onions, bell peppers, jalapeños
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. Spread cooked sausage evenly across the bottom.
3. Sprinkle 1 cup of cheese over the sausage.
4. Arrange frozen tater tots in a single layer.
5. Whisk eggs, milk, salt, and pepper in a bowl.
6. Pour the egg mixture evenly over the tots.
7. Top with remaining cheese.
8. Bake uncovered for 40–45 minutes, until golden and bubbly.
9. Let rest for 5 minutes before slicing and serving.
Notes
Make ahead: Assemble the casserole the night before and refrigerate overnight.
Reheat leftovers in the oven for best results.
