Hearty Tuscan Sausage and Kale Soup with Italian sausage, creamy broth, and tender kale—ready in 35 minutes.


Ingredients

Scale
  • 1 lb Italian sausage
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 2 cups diced potatoes
  • 2 cups chopped kale
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • Salt, pepper, Parmesan

Instructions

1. Brown sausage in oil.

2. Add onions and garlic; sauté.

3. Add broth, water, and potatoes; simmer until tender.

4. Stir in kale and cream; cook 5 minutes.

5. Serve hot with Parmesan.

Notes
