6 cups cubed seedless watermelon
1 ½ cups crumbled feta cheese

¼ cup thinly sliced red onion (white/red parts only)
1 tbsp chopped English mint
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
½ tsp salt
¼ tsp black pepper


Instructions

Halve the watermelon and remove the core with a chef’s knife
Cut flesh into ½-inch cubes
Spread on a clean plate and let drain 10-15 minutes on parchment paper
Finely dice red onion (reserve excess liquid)
In a bowl, combine watermelon cubes and feta
Toss with strained red onion and chopped mint
In a small jar, blend hot honey with 1 tbsp olive oil
Add ½ tsp salt, ¼ tsp black pepper, and 1 tbsp balsamic vinegar
Drizzle dressing over salad
Let rest 5-10 minutes before serving
