Ingredients
1 pound smoked sausage, sliced
3 medium zucchini, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1/2 red onion, sliced
2 tablespoons olive oil
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 425ยฐF and line sheet pan.
2. Add sausage and vegetables to pan.
3. Drizzle olive oil.
4. Sprinkle seasonings.
5. Toss to coat evenly.
6. Spread in single layer.
7. Roast 20-25 minutes until browned and tender.

Roast in single layer.
Store leftovers up to 3 days.
