Description
Zucchini and Tomato Gratin that bakes tender with a golden cheesy topping.
Ingredients
3 medium zucchini, thinly sliced
3 medium tomatoes, thinly sliced
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
Instructions
1. Preheat oven to 375°F and grease baking dish.
2. Layer zucchini and tomatoes alternately.
3. Sprinkle garlic and seasonings.
4. Drizzle olive oil.
5. Top with cheeses.
6. Bake 30-35 minutes until tender and golden.
7. Rest before serving.
Notes
Slice vegetables evenly.
Broil briefly for golden crust.
Store leftovers up to 3 days.
