Ingredients
2 sheets puff pastry, thawed
8 ounces double-cream Brie cheese, cubed
1/4 cup hot honey
Optional: Fresh rosemary or chopped pistachios for garnish
Instructions
Preheat your oven to 375 degrees F (190 degrees C).
Lightly spray a 24-count mini muffin tin with non-stick cooking spray.
Roll out the pastry sheets on a lightly floured surface.
Slice the dough into 24 equal squares, approximately 2.5 x 2.5 inches each.
Press each square into the slots of the mini muffin tin to form cups.
Cut the chilled Brie into 24 bite-sized cubes, keeping the rind intact.
Place one cube of Brie into the center of each pastry cup.
Drizzle 1/2 teaspoon of hot honey over each piece of cheese.
Bake for 12 to 15 minutes, or until the pastry is deep golden brown.
Allow the bites to cool in the tin for 5 minutes before serving.
Notes
Keep the Brie chilled until the very last moment before cubing to ensure clean, easy handling. You can garnish with a small sprig of rosemary or a sprinkle of crushed pistachios for extra color and crunch. Store leftovers in an airtight container in the refrigerator and reheat in a toaster oven for best results.
