Description

Tangy, pillowy bagels made with Greek yogurt instead of traditional eggs. Quick and easy to make in an air fryer for a crispy crust and soft center in under 30 minutes of active time. Ideal for gluten-free or vegan options with simple substitutions.


Ingredients

Bread flour, 2 1/2 cups
Plain Greek yogurt, 1 cup
Large egg, 1 (use aquafaba for egg-free)
Milk, 1/4 cup
Active dry yeast, 2 1/2 tsp
Coarse salt, to taste


Instructions

Combine warm water, flour, salt, sugar, and yeast in a bowl
Knead dough for 8 minutes until smooth and elastic
Rest dough under a damp cloth while air fryer preheats
Roll dough into 8 balls and shape into ropes
Form ropes into circles by twisting and joining ends
Let rest 10 minutes on floured surface
Blend Greek yogurt and egg (or aquafaba substitute)
Dip bagels in yogurt mixture, coating with coarse salt and optional seeds
Air fry at 375°F for 10 minutes, flip, spray with milk mixture, and cook final 8-10 minutes

Notes

Aquafaba (bean water) can replace egg for egg-free version
