Ingredients
Snap peas, 1 lb (450g)
Sesame oil, 1 tbsp
Garlic, 4 cloves, minced
Soy sauce, 3 tbsp
Water, 2 tsp
Crushed red pepper, a pinch (optional)
Toasted sesame seeds, for garnish
Instructions
Rinse snap peas under running water and snap off the ends.
Peel and mince garlic cloves coarsely.
Combine soy sauce, 2 tsp water, and a pinch of crushed red pepper in a bowl.
Heat a wok or skillet over high heat for 1 minute.
Add sesame oil and swirl to coat the pan thoroughly.
Once the oil starts to smoke, add garlic; stir-fry for 30 seconds.
Add snap peas to the pan and toss until evenly coated.
Pour the prepared soy mixture over the vegetables immediately.
Reduce heat to medium and continue stir-frying for 4-6 minutes, until snap peas are tender-crisp.
Add toasted sesame seeds, if desired, and mix briefly to combine.
Notes
Use snow peas as a substitute if snap peas are unavailable.
Replace sesame oil with canola oil for a different flavor profile if preferred.
For a gluten-free version, use tamari in place of soy sauce.
For extra crunch, serve immediately after cooking.
