Description

Grilled skewers of tender chicken breast, juicy pineapple, and colorful bell peppers topped with a tangy BBQ glaze offer a sweet and smoky flavor with tropical flair. These kabobs are easy to make and bursting with flavor.


Ingredients

1.5 lbs chicken breast, cut into 1-inch cubes
14 oz fresh pineapple, cut into chunks (substitute with apple if needed)
2 bell peppers, mixed yellow and red, seeded and sliced
1 cup BBQ sauce, smoky base
2 tbsp olive oil (or avocado oil)
Salt and pepper to taste


Instructions

Soak wooden skewers in water for 30 minutes if using wood.
Toss chicken cubes with olive oil, salt, and pepper until evenly coated.
Alternate placing pineapple chunks, bell pepper slices, and chicken pieces on skewers.
Brush skewers with half the BBQ sauce and refrigerate for at least 30 minutes.
Preheat grill to 375°F.
Place skewers on the grill and cover, grilling for 12 minutes total, turning every 3 minutes.
Brush remaining BBQ sauce halfway through, and again during the last few minutes of grilling.
Remove skewers when chicken is cooked through and sauce is caramelized.

Notes

Use metal skewers for easier grilling if available.
Adjust the sweetness of the BBQ sauce based on your preference.
For a halal preparation, ensure your BBQ sauce is alcohol-free.
Marinating longer than 30 minutes may intensify flavor but won’t be necessary.
Leftover kabobs can be stored in an airtight container for up to two days.
