Description

This succulent pulled beef is the perfect centerpiece for your next summer gathering. By utilizing the slow cooker, you can achieve restaurant-quality, tender shreds without heating up your kitchen. The long, low-temperature cook breaks down the beef chuck roast while infusing deep flavors from the molasses-based BBQ sauce, onions, and smoky paprika. It is an ideal, stress-free main dish that allows you to enjoy time with your guests while the meal cooks to perfection.

Ingredients

Scale

3 lbs Beef Chuck Roast
18 oz BBQ Sauce (alcohol-free)
2 large Yellow Onions, sliced into thick half-moons
2 tbsp Apple Cider Vinegar
1 tsp Smoked Paprika

Instructions

Place the sliced onions in an even layer at the bottom of the slow cooker.
Rub the beef chuck roast with the smoked paprika and place it on top of the onions.
Pour the BBQ sauce and apple cider vinegar over the meat.
Set the slow cooker to low and cook undisturbed for 8 hours.
Test the meat with a fork to ensure it shreds easily.
Remove the beef to a cutting board, shred using two forks, and return to the sauce before serving.

Notes

If desired, substitute the beef chuck roast with lamb or goat shoulder. Ensure the BBQ sauce used is confirmed to contain no alcohol or pork-based ingredients. Serve on toasted buns with a side of coleslaw for a classic block party experience.
