Ingredients
1 lb ground beef
1 medium head green cabbage, chopped
6 cups low-sodium beef broth
28 oz crushed tomatoes
1 cup uncooked long-grain white rice
1 medium onion, diced
3 cloves garlic, minced
1 tablespoon beef bouillon
1 tablespoon Italian seasoning
Instructions
Heat a large stockpot over medium-high heat.
Add the ground beef to the pot and cook until browned, breaking it apart with a wooden spoon.
Drain the excess fat from the pot.
Add the diced onion to the beef and cook until translucent.
Stir in the minced garlic and cook for one minute until fragrant.
Pour the crushed tomatoes and beef broth into the pot.
Add the chopped cabbage, bouillon, and Italian seasoning to the liquid.
Bring the mixture to a gentle boil over medium-high heat.
Reduce the heat to low, cover, and simmer for 20 minutes until the cabbage is soft.
Add the rice, cover again, and simmer for an additional 20-25 minutes until the rice is tender and the soup has thickened.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. The rice will continue to absorb broth, so you may need to add a splash of water or beef broth when reheating.
