Ingredients
1 lb Ground Beef (85/15 fat ratio)
1 cup White Rice (long grain, uncooked)
2 cups Cheddar Cheese (freshly shredded)
2 cups Beef Broth (low sodium)
1 small Onion (finely diced)
Instructions
Heat a large skillet over medium-high heat.
Add the ground beef to the pan and break into smaller pieces with a wooden spoon.
Add the finely diced onions to the beef and cook until browned.
Drain the excess fat from the pan.
Stir in the uncooked rice and toast slightly.
Pour in the beef broth and scrape the bottom of the pan to release browned bits.
Reduce heat to low, cover with a tight-fitting lid, and simmer for 18 to 20 minutes until liquid is absorbed.
Turn off the heat once the rice is tender.
Sprinkle the cheddar cheese evenly over the top.
Cover with the lid for two minutes to allow the cheese to melt thoroughly.
Notes
Use freshly shredded cheese for better melting consistency. If the rice seems too firm, add an extra splash of broth and cover for another minute. Store leftovers in an airtight container for up to 3 days.
