Description

This Cheesy Keto Shredded Chicken Bake is a delicious, low-carb comfort meal that perfectly balances tender shredded chicken with a rich, creamy cheese sauce. Packed with high-quality fats and protein, it satisfies your cravings without the need for grains. Ideal for quick weeknight dinners, this casserole uses melted mozzarella and parmesan to create a golden, bubbly crust. It is a reliable, flavorful staple for any keto meal plan that reheats beautifully for leftovers.

Ingredients

Scale

3 cups shredded chicken (rotisserie or poached)
2 cups mozzarella cheese, shredded
0.5 cup parmesan cheese, freshly grated
0.5 cup heavy cream
1 tbsp Italian seasoning
1 tsp garlic powder

Instructions

Preheat your oven to 375 degrees Fahrenheit.
Grease a nine-by-nine inch casserole dish with butter or olive oil.
Combine the shredded chicken, heavy cream, Italian seasoning, and garlic powder in a large mixing bowl.
Fold in half of the mozzarella and half of the parmesan cheese into the mixture until evenly coated.
Transfer the chicken mixture into the prepared casserole dish.
Spread the remaining mozzarella and parmesan evenly over the top layer of the chicken.
Place the dish in the preheated oven and bake for twenty minutes.
Increase heat to broil for three minutes until the cheese is golden brown.

Notes

For the best melting results, shred your mozzarella cheese at home from a block. Freshly grated parmesan provides better flavor and saltiness than canned versions. You can use fresh minced garlic instead of garlic powder if you prefer more pungency. This dish keeps well in an airtight container in the refrigerator for up to three days.
