This classic Cherry Crisp is a delightful summer dessert, featuring a bed of vibrant, macerated fresh cherries topped with a buttery, golden oat streusel. It is the perfect balance of sweet, jammy fruit and a crunchy, buttery topping, making it an easy yet impressive treat that highlights fresh produce without the need for complex pastry techniques.
Ingredients
6 cups fresh cherries, pitted and halved
2 tablespoons granulated sugar
1.5 cups old fashioned oats
1 cup all-purpose flour
1 cup brown sugar
0.5 cup unsalted butter, cold and cubed
Instructions
Preheat your oven to 375 degrees Fahrenheit.
Combine pitted fresh cherries with two tablespoons of sugar in a large bowl and toss to coat.
Transfer the cherry mixture into a greased nine by nine-inch baking dish.
In a separate bowl, whisk together the oats, flour, and remaining brown sugar.
Use a pastry cutter to incorporate the cold cubed butter into the dry mixture until it resembles coarse meal.
Sprinkle the oat crumble evenly over the cherry layer.
Place the dish on the center rack of the oven and bake until the fruit is bubbling vigorously and the top is deep golden brown.
Cool for at least twenty minutes before serving to allow the juices to set.
Notes
Use a dedicated cherry pitter to save significant time and keep your kitchen clean during prep. A dollop of vanilla ice cream or whipped cream is an excellent serving suggestion. Store leftovers in an airtight container in the refrigerator for up to three days.
