Ingredients
Chicken breast, 2 lb (900g), halal-approved, boneless
Tomatoes, 8-10 medium, cherry or grape
Mozzarella, 12 oz (340g), fresh or plug
Basil leaves, 10-12 large
Balsamic vinegar, 2 tbsp (non-alcoholic if needed)
Olive oil, 1 tbsp (extra virgin or avocado)
Salt, to taste
Black pepper, freshly ground
Instructions
Pat chicken breast dry with paper towels
Season both sides with salt and pepper
Heat olive oil in a skillet over medium-high
Cook chicken 4-5 minutes per side until golden and internal temperature reaches 165°F
Let rest 5 minutes, then slice into strips
Arrange tomatoes, mozzarella, and basil leaves in a bowl
Drizzle balsamic vinegar and olive oil, then toss to coat
Fold in chicken strips and gently combine
Divide into meal prep containers or serve immediately with sourdough
