Ingredients
- 2 lbs chicken (drumsticks or thighs)
- 2 cups all-purpose flour
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 2 eggs
- 1/2 cup whole milk
- Vegetable oil for frying
Instructions
1. Season chicken and let it rest for 30 minutes.
2. Whisk eggs and milk in one bowl; mix flour and spices in another.
3. Dip chicken in flour, then egg wash, then flour again.
4. Let coated chicken rest for 10–15 minutes on wire rack.
5. Fry at 325–350°F for 12–15 minutes until golden and crisp.
Notes
Let the chicken sit at room temperature before frying.
Use a wire rack for draining to keep the crust crispy.
Optional: Soak chicken in buttermilk overnight for extra flavor.
