Description
This moist, dense seasonal quick bread combines earthy pumpkin puree with decadent semi-sweet chocolate morsels. Featuring a perfect balance of warming spices, this loaf provides a consistent, tender crumb that stays soft for days. The addition of vegetable oil ensures maximum moisture, while the specific combination of sugars creates a deep, caramel-like flavor profile. Perfect for breakfast or a cozy afternoon snack, this classic American treat features delicious pockets of melted chocolate in every slice.
Ingredients
15 oz pumpkin puree (pure pumpkin, not pie filling)
2 cups all-purpose flour
1.5 cups semi-sweet chocolate chips
2 large eggs (room temperature)
1 cup granulated sugar
0.5 cup vegetable oil
1 tsp baking powder
0.5 tsp salt
1 tsp ground cinnamon
0.5 tsp ground nutmeg
Instructions
Preheat your oven to 350 degrees Fahrenheit and grease a standard 9×5 inch loaf pan.
In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
In a separate bowl, combine the pumpkin, sugar, oil, and eggs until completely smooth.
Add the dry ingredients into the wet mixture, stirring with a spatula until just combined.
Fold in the chocolate chips gently to ensure even distribution.
Pour the batter into the prepared loaf pan and smooth the top with a knife.
Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
Notes
Use the spoon and level method to measure the flour to prevent a dry loaf. To keep chocolate chips from sinking, toss them in a teaspoon of flour before folding them into the batter. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 1 month.
