Description

Ingredients

300g Digestive biscuits, finely crushed
100g Unsalted butter, melted
900g Cream cheese, full fat, softened
200g Caster sugar
250g Mixed dried fruit, soaked in orange juice
2 tsp Mixed spice (nutmeg, cinnamon, cloves)
3 Large eggs, room temperature
1 tsp Pure vanilla extract


Instructions

Preheat your oven to 150C while preparing the base mixture.
Combine crushed biscuits and melted butter in a medium mixing bowl.
Press the mixture firmly into the base of a springform pan.
Bake the crust for 10 minutes then allow it to cool completely.
Beat the cream cheese and caster sugar until the mixture appears smooth.
Add eggs one at a time while mixing slowly to prevent over-aeration.
Fold the soaked dried fruits and mixed spice into the cream cheese base.
Pour the batter over the cooled crust until the pan is full.
Wrap the exterior of your pan with foil to prevent water seepage.
Place the pan in a large roasting tin filled with hot water halfway up the sides.
Bake for 60-70 minutes until set but slightly wobbly in the center.
Cool in the oven with the door ajar, then chill in the refrigerator for at least 8 hours before serving.

Notes

Ensure all ingredients are at room temperature to avoid lumps in the batter. The water bath is essential for a smooth, crack-free surface. Soak the dried fruits in orange juice for at least an hour before mixing. Store in the refrigerator for up to 3 days.
