Description

A tropical summer treat combining the sweetness of watermelon with the creaminess of full-fat coconut milk and a touch of honey. These homemade popsicles are natural, refreshing, and perfect for hot days without artificial ingredients.


Ingredients

Scale

4 cups watermelon
2 cups full-fat coconut milk
2 tablespoons honey
1 tablespoon lime juice, optional
8 popsicle molds, silicone or plastic


Instructions

Cut the watermelon into chunks and blend until smooth
Strain the juice through a fine mesh sieve if desired for a smoother texture
In a large mixing bowl, add watermelon juice, coconut milk, and honey
Mix well and add lime juice if using
Taste and adjust sweetness if necessary
Pour the mixture into popsicle molds, leaving about 1/4 inch at the top for expansion
Insert popsicle sticks into each mold
Freeze until solid, at least 6 hours or overnight

Notes

Use refrigerated coconut milk for a colder, smoother result
Substitute honey with maple syrup or agave
Store in the freezer for up to 3 months
