2 cups apple cider vinegar (5% acidity)
6 cups granulated sugar

Instructions

Slice the jalapeños into even quarter-inch rings using a sharp knife or mandoline (wear gloves to avoid skin irritation).
Discard the stems and keep seeds for added heat.
Combine apple cider vinegar, sugar, turmeric, celery seed, and garlic powder in a large heavy-bottomed pot.
Bring to a steady boil over medium-high heat, stirring until sugar is fully dissolved.
Reduce heat to a simmer and cook for 5 minutes until the syrup thickens slightly.
Add the sliced jalapeños to the pot and simmer for 4 minutes.
Use a slotted spoon to transfer peppers into clean, sterilized jars.
