Ingredients
2 lbs (450g) Chicken Breasts
Or thighs for extra juiciness
1/2 cup Sun Dried Tomatoes
Oil-packed for richest flavor
2 cups (480ml) Heavy Cream
Half-and-half if dairy-afraid
12 oz Frozen Spinach
Pre-chopped works best
4 cloves Garlic
Minced or pressed
Instructions
Pat chicken dry with paper towels
Season with salt, pepper, and Italian seasoning
Arrange in single layer in crockpot
Place garlic, sun-dried tomatoes, and olive oil in blender
Blend until smooth with small liquid additions
Pour mixture over chicken in slow cooker
Cook on LOW 6-8 hours or HIGH 3-4 hours
Stir in frozen spinach until melted
Swirl in heavy cream before serving
