Ingredients
4 chicken breasts (6 oz each), halal-certified
2 cups cream of mushroom soup
6 cloves garlic, freshly minced
2 cups baby spinach
1 cup parmesan cheese, freshly grated
Olive oil
Salt and pepper
Instructions
Pat chicken dry and season with salt and pepper
Heat olive oil in a skillet, sauté chicken over medium-high heat until both sides are golden
Reduce heat to low, add garlic and cook for 1 minute
Stir in cream of mushroom soup and simmer for 5 minutes
Add baby spinach to the sauce until wilted
Gradually stir in parmesan cheese to avoid clumping
Place chicken breasts into the sauce, cover the skillet, and cook for 15 minutes at low heat until tender
Remove skillet from heat, let rest for 5 minutes, then garnish with fresh herbs and serve
