Description
Light and refreshing rice paper rolls filled with cucumber, avocado, carrots, and rice noodles. A low-calorie, nutrient-packed dish perfect for summer meals or quick snacks.
Ingredients
Cucumber, 1, sliced
Avocado, 1
Rice Paper, 4–8 sheets
Carrots, 1, julienned
Rice Noodles, 1 cup, cooked and drained
Green Onions, 1/4 cup, chopped
Instructions
Cut cucumber into thin slices
Cut avocado in half, remove pit, and slice
Cut carrots into fine strips (julienne)
Cook rice noodles and drain
Bring a shallow bowl of warm water to room temperature
Dip one rice paper sheet into the water for 10–15 seconds
Transfer to a clean surface while the paper softens
Place a few slices of cucumber in the center of the rice paper
Add a few slices of avocado to one side
Add a handful of carrots, rice noodles, and green onions
Fold top and bottom of the paper inward
Roll tightly to enclose filling
Repeat with remaining ingredients
Notes
Use English cucumbers for crispness
Soak rice paper sheets for 10–15 seconds only to avoid disintegration
Optional: Add herb like mint or cilantro
Serve with peanut or chili-garlic dipping sauce
Store wrapped rolls in airtight container with paper towel for 2 hours max
